This recipe can make from 10-15 black bean patties depending on how big you make them. These are great to store in the freezer and pop out when you want a quick and easy lunch! Eat them plain or on a whole wheat bun!
- 2 cans 15 oz cans black beans drained
- 1 red onion chopped
- 1 tbsp minced garlic
- 1/2 cup grated carrots
- 1 green bell pepper chopped
- 1 tbsp cornstarch
- 2 tbsp warm water
- 2 tbsp sriracha
- 2 tsp red pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3/4 cup all purpose flour
- whole wheat buns

Preheat over to 375 F.

Drain black beans and add to medium sized bowl. Mash using fork.

Add onion, carrots, green bell pepper, and garlic. Mix until well combined.

In a separate bowl whisk together cornstarch, a few tbsp of warm water, sriracha, chili powder, red pepper, cumin, salt, and black pepper. Once well combined add this mixture to black bean mix.

Stir in flour with bean mixture, 1/4 cup at a time. Continue to stir until thick batter forms.

Spoon small amounts of mixture onto nonstick pan forming 1/2 in patties. I like to make them about the size of my palm.

Bake for 20 minutes flipping halfway through.

Serve on a toasted whole wheat bun with your favorite toppings! (I recommend some sliced avocado!)
The toppings you use is what makes this burger even more amazing! I like sliced avocado, iceberg lettuce, fresh sliced tomatoes, and spicy mustard.
