Classic Kale & White Bean Soup
Ingredients
- 2 tbsp earth balance
- 4 cans great northern beans
- 8 oz kale (if you don’t have kale on hand spinach well work)
- 1 tsp salt
- 2 tsp crushed red pepper
- 4 stalks of celery, chopped
Preparation
- In dutch oven sauté onion, celery, and garlic until slightly browned
- Next add butter and heat until melted
- Open, drain, and rinse great northern beans
- Add salt, beans, and veggie broth to dutch oven
- Bring to a boil
- Add kale. Let simmer for 5-8 minutes
- Serve immediately while warm!
