Classic Kale & White Bean Soup

Ingredients

  • 2 tbsp earth balance
  • 4 cans great northern beans
  • 8 oz kale (if you don’t have kale on hand spinach well work)
  • 1 tsp salt
  • 2 tsp crushed red pepper
  • 4 stalks of celery, chopped

Preparation

  1. In dutch oven sauté onion, celery,  and garlic until slightly browned
  2. Next add butter and heat until melted
  3. Open, drain, and rinse great northern beans
  4. Add salt, beans, and veggie broth to dutch oven
  5. Bring to a boil
  6. Add kale. Let simmer for 5-8 minutes
  7. Serve immediately while warm!
