Baked Fries & Cashew Cheese

One of my favorite foods in the world is french fries. I could eat them every day and never get tired of them! Most fries from restaurants and fast food places are flooded in oil and salt. They may taste good but they always leave you feeling tired and sick an hour after you eat them.

I wanted to find a recipe that satisfied my cravings but wasn’t high in saturated fat and sodium. I’ve tried lots of complicated recipes with a crazy amount of ingredients but I always resort back to this simple recipe. Its simple, yet delicious. And its even better dipped in cashew cheese sauce.

Cashew Cheese

A healthy alternative for dairy cheese. Perfect as a dipping sauce or spread for sandwiches, wraps, and more.

Ingredients
  • 2 cups raw cashews (soaked)
  • 1 cup nutritional yeast
  • 1 tbsp white miso paste
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp mustard powder
  • Salt to taste
  • Pepper to taste
  • 2 cups unsweetened non-dairy milk
Instructions
  1. Soak cashews for at least 6 hours.

  2. Combine all ingredients in high-speed blender or food processor.

  3. Blend until smooth.

  4. Enjoy as a dipping sauce with baked fries. (below)

Ingredients
  • 5 potatoes medium sized
  • sea salt to taste
  • pepper to taste
  • nutritional yeast to taste
Instructions
  1. Set oven to 425°F.

  2. Scrub potatoes and slice into thin sticks. (I use a french fry cutter, which makes this step super quick!)

  3. Line baking sheet with parchment paper. Add single layer to baking sheet. 

  4. Bake for 35 minutes or until golden brown.

  5. Let cool for 5-10 minutes. Enjoy with cashew cheese sauce.
