Rice paper rolls: The perfect poolside snack

If you’re looking for a light and refreshing snack, I’ve got the perfect fix.

Rice paper rolls are easy to make once you get the hang of it. But if you’re anything like me, making these for the first time might be a little rough! I’ve found that trial and error is the best method.

Although the recipe I provide is made up of fruit, you can use any fruit or vegetable for your rolls (One of my favorite combos is shredded carrots, cabbage, bok choy, & hemp seeds). Use your favorite fruits or veggies and make yourself the perfect treat!

Ingredients

10 spring roll rice paper wrappers

Your choice of fresh fruit

5 fresh mint leaves

Optional: 5 tbsp chia seeds, 5 tbsp shredded coconut, vanilla soy yogurt

Instructions

Start by chopping fruit into small pieces.

Once fruit is prepared, set aside and submerge rice paper in room temperature water for 2-3 minutes until it feels soft and malleable.

Begin filling the rice paper with desired fruit followed by chia seeds, mint, and shredded coconut. (use 1/2 tbsp of chia seeds & 1/2 tbsp of shredded coconut for each roll)

Repeat these steps for each rice paper roll.  Use vanilla soy yogurt as a dipping sauce and ENJOY!
