Homemade Burrito Bowls

Everyone loves burrito bowls! I love Chipotle and Qdoba but sometimes you just want a home cooked healthy clean meal. I like making my own bowls because I’m sure that it is oil free and I can make it exactly how I like it.

 

The instructions below are just guidelines. I make this meal different every single time and it always turns out amazing! Make it your own with your favorite ingredients. ☺

Homemade Burrito Bowls

Ingredients
  • 1 cup brown rice
  • 1 can black beans
  • 1 can kidney beans
  • 1 can corn
  • 1 can vegetarian refried beans
  • 1 can green chilies
  • 1 bag Gardein mandarin orange crispy chicken
  • 1 avocado sliced
  • 1 green bell pepper chopped
  • 4 leaves iceberg lettuce
  • 1 tomato sliced
  • 1/4 cup dalya cheddar cheese shreds optional
  • salsa
Instructions
Brown Rice
  1. Bring water to a boil. Add brown rice and reduce to simmer. Cover pot and simmer for 45 minutes.

  2. Turn off heat and let set for 15 minutes.

Bean Mixture
  1. In a large strainer combine black beans, kidney beans, and corn. Drain and Rinse. Move to medium sized bowl.

  2. Add green bell pepper and green chilies. Set aside.

Refried Beans
  1. In a small pot, heat refried beans. 

Gardein Chicken
  1. Follow cooking instructions on package. Disregard sauce that comes inside.

  2. Once cooked, cut into small pieces and set aside.

ASSEMBLING YOUR BOWL
  1. Grab a bowl and combine rice, bean mixture, refried beans, lettuce, tomato, sliced avocado and garden chicken.

  2. Top it off with some fresh salsa. Enjoy!

Try with simple homemade guacamole!
