Your new favorite study snack: Chia Pudding

Before I talk about this yummy snack, lets go over some of the benefits of one of the main ingredients, chia seeds!

Chia seeds have lots of health benefits and are high in antioxidants, vitamins, and minerals. Another reason to try this delicious snack!

Okay, now lets talk about the pudding.  Warning: You may become addicted! I always used to see photos of chia pudding on Instagram and think ‘wow that looks so good’ but never made it because I thought it would be tedious and hard to make. I was excited to find that this snack is one of the easiest to make and only takes a few ingredients!

Chia Pudding Recipe

Ingredients

2 cups coconut milk (preferably unsweetened)

1/4 cup chia seeds

1/2 tsp vanilla extract

1 tbsp maple syrup

Optional toppings: fresh cut strawberries and pecans

Instructions

In a medium-sized bowl, mix all ingredients (except for toppings). Once well combined, let set for 5-10 minutes.

Stir once more to get a good consistency.

Evenly distribute the pudding to two mason jars and seal.

Store pudding in the fridge overnight.  The next morning, add toppings desired and enjoy!
